My family’s favorite Oatmeal cookie recipe! Enjoy :-D

by in Uncategorized on December 13, 2011

In my weekly e-zine I’ve decided to add a new “Featured Recipe!” section, and this is the first recipe that I’m highlighting.  My family loves these Oatmeal Cookies and seem to like them best if I use the pecans.  This recipe comes out of The Joy of Creative Cuisine.
Nutty Coconut-Oatmeal Cookies
1/2 C     Butter or margarine
2 TBLS  Light corn syrup
3 TBLS  Water
1 C          Flour
3/4 C     Flaked or Shredded Coconut
3/4 C     Rolled Oats
2/3 C     Sugar
1/3 C     Finely Chopped Walnuts, Pecans or Almonds
1 tsp      Baking Soda

1. Pre-heat oven to 350F (175C). Grease 2 baking sheets.

2. In a small saucepan over low heat, (or microwave safe bowl), combine butter, corn syrup and water.  Warm until butter melts.  Let cool.

3. In a medium bowl, combine flour, coconut, rolled oats, sugar, nuts & baking soda.  Stir in cooled corn-syrup mixture until combined.

4. Shape mixture into 1 inch balls; place about 2 inches apart on greased baking sheets.  Flatten each ball slightly.

5. Bake in pre-heated over 12 to 14 minutes or until golden brown.  Cool on baking sheets on wire racks 1 minute.  Remove from baking sheets; cool completely on wire racks.  Makes about 36 cookies

I hope that you have an opportunity to bake these with your family. 😀

Merry Christmas!

I felt lead to go on a 2 mile walk this morning to get some exercise, but more importantly to get some clarity on projects that I'm working on. On the home stretch I looked down & there was my dime.
